Parmesan-Yogurt dressing

To 1 cup plain yogurt add 1/2 cup vinegar (white or cider) and 1/4 cup olive oil.

To this base add any selection of fresh herbs, a little garlic, fresh ground black pepper and a dash of salt. Mix in a handful of grated parmesan or other aged dry cheese. Enjoy with spring salads or as a dip with vegetables.
