The Story of Bread

Thanksgiving of '97, we were visiting family in Iowa. Ted's Dad had just been to a Brick Oven Pizza Dinner on a farm. He was pretty excited and after talking, Ted just had to see this oven for himself. The rest is history. We started building our commercial kitchen the next week and came into a stash of used brick a week later. We were set to make the only organic sourdough bread in the area. We had been making sourdough bread for most of our married life. This was one thing we felt qualified to do. Never mind that baking in a brick oven would be new. We knew the market share would be small. Big was not in our plans.

Like all living things, our bread has changed over time. The concept remains the same. Currently we grind all our whole grains and all the flour for our Stockholm Wheat Bread in a sweet old mill with 24" stones.
