Cilantro Salad

We made this salad with quinoa but rice or bulgur would work as well.

  1. Chop several bunches of cilantro
  2. Juice 4-5 limes
  3. Mince chives or small onion
  4. Olive oil
  5. Salt
  6. Add to cooked grain and serve on a bed of fresh lettuces
